Truffle Hunting/Cheesemaking Experience with Cast Iron Farm February 19 and March 5, 2023
We are very excited to offer a unique truffle hunting, cow milking, cheese tasting and cheese making experience that you do not want to miss! Start the morning at Cast Iron Farm in McMinnville with some coffee/tea/continental treats and a hands on milking demonstration followed by a lovely hike in the woods with our amazing Italian trained Lagotti. This is also a hands on experience where everyone can participate in digging up Oregon White Winter truffles that our Lagotti have identified on site. After we have a good amount of truffles to share with everyone we return to Cast Iron Farm for a truffle cleaning demonstration, infusion demonstration and a truffle infused tasting one will not want to miss. Christine from Cast Iron will do a group cheese making course. Beverages will be provided along with a heavy charcuterie board. Everyone will go home with truffles, fresh cheese and a truffle infused product. $225 per person. $125 per person (for those that have purchased a puppy). Groups of 5 or more receive a 20% discount.

Oregon’s Native Truffles
Oregon happens to be home to four native truffle species of world-class culinary quality: Oregon Winter White Truffle (Tuber oregonense), the Oregon Spring White Truffle (Tuber gibbosum), the Oregon Black Truffle (Leucangium carthusianum), and the Oregon Brown Truffle (Kalapuya brunnea). These native delicacies grow throughout the forests of the Willamette Valley and Columbia Gorge, making Oregon and the surrounding Pacific Northwest the only places where truffles grow in the United States. Pretty wild.

Truffle Hunting Dog
Having some knowledge of where to look for truffles is only half the search. In order to be successful at truffle hunting, you must also have the right tools. As any truffle forager knows, you are only as sharp as the dullest tool in the shed. In this case, that not-so-dull tool is a Lagotto Romagnolo, which is specifically bred to sniff out truffles that hide beneath the forest floor.
In addition to breeding Lagotto puppies, we regularly hunt truffles with our three trained Lagotti during Oregon’s peak truffle seasons. Lea, Ava, and Stitch have proven to be very successful truffle hunting dogs with some impressive finds. Despite their high success rates, they never let it go to their heads and are more than happy to show new Lagotti in training the ropes.
It is always a win-win when we can increase our bond with our Lagotti and enjoy a shared hobby together. Without our trusty Lagotti, we would not be nearly as successful at finding truffles, even with our knowledge and experience.
